About 42% of the gross product of Modenese agriculture comes from
the zootechnic sector. Pig farming and milk production for Parmesan
cheese are the most important activities of this field.
The pig farms in Modena are considered to be about the largest
in Europe (with around 516,000 animals). They represent 37% of
the total pig farm wealth in Emilia Romagna and 10% of the national.
Consequently to this kind of breeding an industrial filiera of
meat processing and an important commercial activity have been
created (Commodity Exchange of the Chamber of Commerce of Modena,
www.mo.camcom.it/borsamerci,
is as regards this sector, the first Italian market and it is
among the most important European markets).
The presence of cattle, that amounts to about 115,000 animals,
is lower compared to 18% of regional wealth and 3% of the national.
This sector is very important for the production of milk and Parmesan
cheese and the pig, sheep, goat, rabbit and poultry farming is
increasing. Most of the activity is centred round the flat areas
of the plain, but as far as cattle farming is concerned, more
than 40% of the livestock is still reared in the hills and mountains.
The production structure is concentrated on the development of
firms working on a larger scale of production. These companies
are particularly involved in the attention for quality control
of meat.
